Basic Potato Soup
1 T olive oil
1 Onion Chopped
3 C Chicken Stock
3 C Beef Stock
1 Bay Lead
½ t dried thyme
3 medium potatoes cubed
Sauté onion in olive oil in stock-pot until soft. Add remaining ingredients. Bring to a boil, cover, and simmer for 20 minutes. Lightly mash potatoes. Salt and pepper to taste. Serve immediately.

Did we eat this growing up because I just had this nostalgic wave pass over me when I looked at the picture. Yummy.
