Rattatouille

I think I can easily put this down as one of my favorite foods....

2 Tbsp Olive Oil
1/2 Yellow Onion Sliced
3 Cloves Garlic Minced
2 Yukon Gold Potatoes Thinly Sliced
2 Roma Tomatoes Thinly Sliced
1 Zucchini Thinly Sliced
1 Yellow Squash Thinly Sliced
1 Tbsp Herbs De' Provence
1 Tsp Dried Thyme
Salt
Pepper
1 Cup Grated Parmesan Cheese

Preheat oven to 375 degrees. Lightly olive oil a baking dish. Heat 1 Tbsp olive oil in a saute pan. Add onion and saute till golden and tender. Add garlic and continue to saute for 60 seconds. Evenly spread this mixture in the bottom of the prepared baking dish.  Alternating each vegetable, layer the potatoes, tomatoes, zucchini, and squash in the dish on top of the onions. Drizzle the other Tbsp of oil on top of the vegetables. Then sprinkle the herbs De' Provence and thyme on top, followed by salt and pepper to taste. Cover with foil and place in oven. Bake for 40 minutes, or until potatoes are tender. Sprinkle Parmesan cheese on top and bake uncovered an additional 20 minutes until golden on top.
